Ingredients
1 fillet Sizzlefish Wild Caught Ahi Tuna, thawed
1 ½ cups Sushi Rice, cooked and cooled to room temperature
2 tbsp. Scallions, chopped
1 tbsp. Sriracha
1 tbsp. Mayo
1 tsp. Apple Cider Vinegar or Rice Vinegar
6 Nori Seaweed Sheets
½ English Cucumber, thinly sliced
1 Avocado, quartered and thinly sliced
Directions
Step 1
Slice the thawed ahi tuna against the grain into tiny bite-sized pieces.

Step 2
In a large bowl, combine the sliced tuna, chopped scallions, sriracha, mayo, and apple cider vinegar. Season with salt and black pepper to taste.

Step 3
Place a nori seaweed sheet on parchment paper or bamboo mat.

Step 4
Add 1/3 cup – ½ cup cooked rice to the center of the nori seaweed sheet. With wet fingers, gently press down on the rice to spread it out to cover the nori.

Step 5
Add a line of spicy tuna (about 2-3 tbsp) on one end of the nori, followed by a line of sliced avocado, and thinly sliced cucumber.

Step 6
Roll up tightly using the parchment paper or bamboo mat as assistance.

Step 7
Slice into ½” thick sushi. Serve with soy sauce, wasabi, or your favorite dipping sauce to enjoy!
