
Tuna Avocado Roll

Ingredients
1 cup uncooked sushi rice
2 cups water
1/4 cup rice vinegar
2 tbsp sugar
1/2 tsp salt
1 6 oz. portion Sizzlefish Ahi Tuna, thawed
2 sheets nori seaweed
1/4 a medium cucumber, lightly peeled and thinly sliced into 1/2 inch strips
1/2 a medium avocado, sliced thinly
1/3 cup fresh cilantro
1 tbsp sesame seeds
Directions
Step 1
Place the sushi rice in a bowl and rinse it thoroughly with cold water, gently rubbing the grains together. Repeat this process until the water runs clear. This helps remove excess starch. Add the rinsed rice and 2 cups of water to a pot. Let it soak for about 30 minutes, then cook it according to the rice cooker instructions or bring it to a boil in a pot, reduce the heat to low, cover, and simmer for about 15-20 minutes until the water is absorbed and the rice is tender.

Step 2
While the rice is cooking, mix the rice vinegar, sugar, and salt in a small saucepan. Heat the mixture over low heat, stirring until the sugar and salt dissolve. Remove from the heat and let it cool for 20 minutes. Drizzle the vinegar mixture over the rice while gently folding it in using a wooden or plastic spatula.

Step 3
Slice tuna into thin 1/2-inch strips.

Step 4
Lay a sheet of nori on work surface and spread 1 cup of rice evenly, leaving about 1 1/2-2 inches at the top and 1/2-1 inch around the edges. Top rice with a couple strips or tuns, sliced avocado, cucumber strips, and cilantro.

Step 5
Roll away from you starting at the bottom of the roll using sushi mat to tightly roll until you reach the end. Moisten the end of the nori with a little bit of water to help it seal. Repeat with the remaining ingredients to make 2 sushi rolls.

Step 6
Chill rolls for 20 minutes. Slice each roll into 1-inch pieces and top with sesame seeds. Serve with soy sauce or coconut aminos for dipping.
