Ingredients

4 Sizzlefish Cod Fillets

3 cups Cornflakes (gluten free if needed), crushed

1/3 cup All Purpose Flour or Gluten Free Flour

½ tsp Garlic Powder

½ tsp Onion Powder

½ tsp Paprika

½ tsp Dried Thyme

1 tsp Kosher Salt

¼ tsp Black Pepper

1 Large Egg

1 TBSP Spicy Brown Honey Mustard

Olive Oil Spray, optional

Barbeque Sauce, Ketchup or Honey Mustard, for dipping

Directions

Step 1

Preheat the oven to 400 degrees F.

Line a large sheet pan with parchment paper.

Place the crushed cornflakes in a large bowl. In another large bowl, mix together the flour, garlic powder, onion powder, paprika, thyme, salt and pepper.

Step 4

In a separate bowl combine the egg and spicy brown mustard. Mix well to combine.

Step 5

Dry the cod fillets with a paper towel. Next dip the cod in the flour mixture coating well. Then dip the fillet into the egg mixture making sure it’s completely coated.

Step 6

After that, place the cod fillet into the crushed cornflakes, pressing slightly to make sure it is fully coated. Place the coated fillet on the prepared sheet pan. Continue with the rest of the fillets until all are coated well. If using the olive oil spray, lightly spray the top of the coated fillets with the oil.

Step 7

Place the sheet pan in the preheated oven for 20-25 minutes or until fish is fully cooked and has reached 145 degrees F. Serve with the sauce of your choice.

This recipe for Cornflake Crusted Cod is simple to make, delightfully crispy on the outside and incredibly tender on the inside. This is the perfect alternative to fried fish and, even better, this meal is ready in just 30 minutes!

We used cod in this recipe because it is incredibly mild with a slightly sweet flavor and flaky meat. However, any firm, flaky white fish would work well here. We also decided to go for comforting side dishes like mashed potatoes and green beans, but French fries would totally win you points with the kiddos too!
