Ingredients
4 portions Sizzlefish Cod, thawed
1 egg
2 cups French fried onions
1/2 tsp dried thyme
1/2 tsp black pepper
1/4 tsp salt
Chopped parsley for serving (optional)
Directions
Step 1
Preheat oven to 400ºF and line a baking sheet with parchment paper.

Step 2
Combine French fried onions, thyme, black pepper, and salt in a food processor. Pulse until onions are coarsely ground.

Blot excess moisture off cod using paper towel. Whisk egg in a shallow bowl and add French onion mixture to a separate shallow bowl.

Step 4
Dip each portion of cod in egg allowing excess to drip back into bowl and then coat in French onions, pressing gently to adhere. Place on baking sheet.

Step 5
Bake for 10-12 minutes, until fish is cooked through, and French onion coating is browned and crisp.
