Ingredients

2 pieces Atlantic Cod

1 cup rainbow tomatoes

1 cup baby purple potatoes, quartered

2 tablespoons oil of choice

seasoning, as desired

Directions

Step 1

Preheat oven to 400 degrees F.

Step 2

Toss potatoes with 1 tablespoon oil then roast in oven for 15 minutes.

Step 3

Remove pan from the oven and add tomatoes and cod.

Step 4

Drizzle with remaining tablespoon of oil and season as desired.

Step 5

Bake for an additional 10-12 minutes or until fish is cooked.
