One Pan Tomato Basil Cod

Ingredients

3 Sizzlefish cod fillets, defrosted

2 teaspoons olive oil, divided

3 cloves garlic, minced

1 pint cherry tomatoes, sliced in half

¼ cup dry white wine

½ cup chopped basil

2 tablespoons lemon juice

2 teaspoons lemon zest

Salt and pepper to taste

Directions

Step 1

Heat one teaspoon of olive oil in a skillet over medium heat. Add the garlic and sauté until fragrant.

Step 2

Add the cherry tomatoes and cook until soft, about 5 minutes.

Step 3

Add the white wine, basil, lemon juice, and lemon zest. Let the sauce come to a simmer and cook for two more minutes.

Step 4

Transfer the sauce to a bowl and add remaining oil to the pan. Season the cod with salt and pepper and cook for about 5 minutes.

Step 5

Flip the cod, pour the sauce over top and cook another 3-5 minutes until done.
