Ingredients

4 Sizzlefish Haddock Fillets

2 cups Corn Flake Crumbs

1/2 cup All-Purpose Flour

1 tsp Paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Sea Salt

1/2 tsp Black Pepper

2 eggs

Lemon Wedges; optional

Tartar Sauce; optional

Directions

Step 1

In a small bowl, combine the flour, paprika, garlic powder, onion powder, salt, pepper.

Place the crushed corn flakes in a separate bowl.

Place the eggs in another bowl and mix well.

Spray the air fryer pan with oil to coat.

To coat the haddock fillets, dip them first in the flour, then in the egg and next in the crushed corn flakes.

As you coat the haddock fillets with the crumb mixture place them in the oiled air fryer basket.

After placing the fillets in the air fryer basket, spray each one well with olive oil spray.

Set the tray or basket into the air fryer at 400°F, for 6 minutes, flip the fillets and spray with more oil. Continue to cook for an additional 4-5 minutes or until the internal temperature of the fillets reaches 145°F.

Meaning, we dipped the fish in a little flour, then in whipped eggs and then coated them generously in a seasoned crushed corn flake crust. Yep, you read that right, crushed corn flakes. They make the most delicious coating on these haddock fillets. They are slightly sweet and give the crust the most perfect crunch! Not only that, but this double dip method really locks in the moisture so your fillets remain tender and juicy when they cook.

There are a few things you need to do to get that beautiful crust though. You need to make sure the haddock fillets are fully thawed in the refrigerator the night before. You also need to make sure you dry them well with paper towels. If they are still slightly frozen or if there is access moisture in the fillets, they will not completely crisp up the way you want them to. Another tip is to make sure you don’t overcrowd the fish in the air fryer. The air fryer works best if air can circulate around the food, so a little space will give you the perfect crunch on the sides of the fillets.
