Grilled Halibut with Pineapple Relish

Ingredients

2 halibut filets, thawed

2 tbsp. ghee

½ tsp. cumin

1 cup pineapple, sliced

¼ red bell pepper, sliced

1 jalapeno, diced

½ red onion, diced

½ cup cilantro

Juice of 1 lime

½ tsp. salt

Directions

Step 1

Heat the grill to 400 F.

Step 2

Melt the ghee and brush on the flesh of the halibut filets with the cumin.

Step 3

Place the halibut on the grill and cook 6-7 minutes each side.

Step 4

While the halibut cooks, combine the pineapple, red bell pepper, jalapeno, red onion, cilantro, salt and juice of 1 lime in a bowl. Stir to combine then refrigerate until halibut is cooked.

Step 5

Remove halibut from the grill and serve immediately with the chilled pineapple relish.
