Ingredients
4 portions Sizzlefish halibut, thawed and sliced into large pieces
½ cup Panko breadcrumbs
1 cup grated Gouda cheese
1 cup grated cheddar cheese
¼ tsp black pepper
½ tsp salt
1 tbsp fresh chopped thyme
2 tsp Dijon mustard
1 ½ cups whole milk
2 tbsp all-purpose flour
1 tbsp minced garlic
1 cup sliced leeks, green parts only
4 tbsp unsalted butter
Directions
Step 1
Preheat oven to 350ºF and grease an 8x8 oven safe dish with cooking oil.

Step 2
Arrange halibut in dish.

Step 3
Melt butter over medium low heat in a saucepan. Add leeks and sauté for 2 minutes. Add garlic and sauté 1 minute longer.

Step 4
Gradually whisk in flour to form a rue and allow it to toast for 30 seconds. Gradually whisk in milk. Add Dijon mustard, thyme, salt, and pepper. Gradually stir in shredded cheeses until just melted.

Step 5
Pour cheese sauce over halibut and sprinkle with breadcrumbs. Cover with aluminum foil. Bake for 15 minutes. Remove foil and bake for 10 minutes longer. Turn oven to broil for 3 minutes longer or until top is bubbly and golden brown.

Step 6
Top with extra fresh thyme and serve hot.
