Ingredients

2 Sizzlefish Halibut Fillets

2 TBSP olive oil

2 tsp Italian Seasoning

1/2 lb Baby Yukon Gold Potatoes, cut in half

1 large shallot, sliced

2 Garlic Cloves, chopped

1 lb Fresh Green Beans, trimmed

Kosher Salt, to taste

Freshly Ground Black Pepper, to taste

2 TBSP Fresh Lemon Juice

1 TBSP Lemon Zest

Directions

Step 1

Preheat the oven to 425°F. Line a sheet pan with parchment paper.

In a small bowl, combine the olive oil and Italian seasonings.

Place the potatoes, shallots and garlic on the parchment lined sheet pan. Toss them with half of the herb oil mixture. Arrange the potatoes cut side down making sure to leave space between then to brown evenly.

Place the pan in the preheated oven and bake for 15 to 20 minutes. The potatoes should start to brown on the cut side.

Next remove the pan from oven. Add the green beans to the sheet pan. Toss to combine.

Place the halibut fillet on the sheet pan surrounding them with vegetables. Brush the halibut fillets with the remaining oil mixture and bake an addition 15 to 20 minutes or until potatoes are golden brown and tender. The halibut should be between 130 to 135 degrees F.
