
Spicy Halibut Broccoli Bowl

Ingredients
2 halibut fillets, thawed
1 tbsp. extra virgin olive oil
4 cups broccoli, riced
½ cup carrots, shredded
1 cup grape tomatoes, sliced in half
½ tsp. red pepper flakes
salt and pepper to taste
green onions for garnish
¼ cup extra virgin olive oil
¼ cup apple cider vinegar
2 tsp. Tabasco
1 t. spicy mustard
2 tbsp. coconut sugar
½ tsp. pepper
½ tsp. salt
Directions
Step 1
Preheat a skillet to medium heat, place the broccoli rice in the skillet with a ½ cup of water. Cover and bring to a simmer.
Step 2
Once the water has boiled down, removed the broccoli rice and transfer to a bowl.
Step 3
Add the extra virgin olive oil to the pan with the halibut. Sprinkle the halibut with salt, pepper and red pepper flakes.
Step 4
Cook 5 minutes then flip and cook another 5 minutes until flaky.
Step 5
While the halibut cooks, prepare the sauce by whisking the ingredients together in a bowl.
Step 6
Place the cooked halibut over the broccoli rice, add the shredded carrots and grape tomatoes to the bowl.
Step 7
Pour ½ the sauce over each bowl then add sliced green onions for garnish.
