Chili Pineapple Salsa Salmon

Ingredients

2 salmon filets, thawed

1 tbsp. extra virgin olive oil

½ cup pineapple, chopped

1 cup roma tomato, diced

1 jalapeno pepper, diced

½ cup white onion, diced

½ cup cilantro leaves

½ cup edamame, omit for strict Paleo & WHOLE30

2 tsp. chili powder

salt & pepper to taste

Directions

Step 1

Preheat a large skillet with extra virgin olive oil.

Step 2

Place the salmon filets on a place. Add a teaspoon of the chili powder to each filet with salt and pepper to taste. Using your fingers, rub the seasonings into the salmon filets.

Step 3

Place the salmon in the skillet, skin side down. Cook 5 minutes on medium heat.

Step 4

While the salmon cooks, add the chopped pineapple, tomato, pepper, white onion, cilantro and edamame to a bowl. Toss to combine. Set aside.

Step 5

Flip the salmon and cook another 5-7 minutes or until desired.

Step 6

Place the salmon with a ½ cup of the salsa mixture and enjoy!
