Ingredients
2 cups brussels sprouts, ends trimmed/halved
1 cup carrots, peeled and sliced into 1-inch pieces
1 cup red onion, coarsely chopped
1 tbsp olive oil
1/4 tsp salt
1/8 tsp black pepper
4 portions Sizzlefish salmon, thawed
2 tbsp pure maple syrup
2 tsp Dijon mustard
1/2 tsp dried thyme
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Directions
Step 1
Preheat oven to 400ºF and line a large baking sheet with parchment paper. Spread chopped vegetables on baking sheet and drizzle with olive oil. Season with salt and pepper. Toss to coat.

Step 2
Roast for 15 minutes. Stir together maple syrup, mustard, thyme, garlic, salt, and pepper.

Step 3
Blot salmon dry with paper towel. Make space in between vegetables and add salmon. Brush salmon with half of maple mustard sauce and roast for 10 minutes.

Step 4
Brush with remaining maple mustard and roast 5 minutes longer, or until salmon is cooked through.

Step 5
Serve salmon hot over roasted vegetables.
