salt and pepper to taste

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon dried dill

2 Tablespoons chopped parsley

2 Tablespoons freshly chopped dill

3/4 cup of Greek yogurt

1 cup of grated cucumber or thinly sliced cucumber

1 Tablespoon extra virgin olive oil

2 teaspoons lemon juice

1 garlic clove, minced

1 Tablespoons dill, chopped

Dash of salt and pepper

1 cup of cherry tomatoes, chopped in half

1/2 cup of feta cheese

1/4 cup of red onion, diced

1 Tablespoons dill, chopped

1 Tablespoons extra virgin olive oil

Directions

Step 1

Dry your salmon filets on both sounds well. This helps to take away any excess moisture the salmon has which in turn will help the salmon sear and get a nice crust.

Step 1

Step 2

In a small bowl mix together the salt, pepper, paprika, dried oregano and dried dill.

Step 3

When you are ready to cook the salmon sprinkle the spice mixture over the flesh side of each piece of salmon.

Step 4

In a large skillet or cast iron skillet heat the olive oil over medium high heat. Turn the heat down to medium- low.

Step 5

Add each piece of salmon with the skin side down. Press the top of the salmon for about 15 seconds.

Step 6

Add each piece of salmon and repeat the above process.

Step 7

Cook for 3-4 minutes on the first side. If the salmon sticks you need to wait another 1 to 2 minutes.

Step 8

Flip the salmon and cook for another 1 minutes or until the internal temperature reaches 145 degrees F.

Step 9

Remove salmon from the skillet and drizzle extra virgin olive oil, a squeeze of lemon juice over top. Serve with Tzatziki and the Greek style salsa.
