
Slow Cooker Balsamic Salmon and Sweet Potatoes

Ingredients
2 salmon filets, thawed
2 sweet potatoes, peeled and cubed
½ red onion, sliced into large rounds
2 tbsp. balsamic vinegar
½ tsp. thyme
¼ tsp. ginger
¼ tsp. coriander
salt and pepper to taste
Directions
Step 1
Add a ½ cup of water to a slow cooker with the balsamic vinegar. Stir together then place the cubed sweet potatoes over it.

Step 2
Cover and cook 1 hour.
Step 3
Stir the potatoes and place the salmon filet on top.
Step 4
Combine the thyme, ginger, coriander, salt and pepper in a small bowl together. Sprinkle the seasonings over both salmon filets.
Step 5
Add the sliced red onion on top, cover and slow cook 25 minutes or until salmon is fork tender.
Step 6
Remove from the slow cooker and serve.
