Ingredients
4 portions Sizzlefish scallops, thawed
1 cup frozen corn, thawed
¼ cup chopped green onions
1 cup all-purpose flour
¼ cup cornmeal
1 tsp dried thyme
½ tsp smoked paprika
½ tsp garlic powder
¼ tsp cayenne pepper
½ tsp baking powder
1 ½ tsp salt
1 large egg
2/3 cup whole milk
Lemon wedges for serving
Directions
Step 1
Preheat oven to 250ºF and line a baking sheet with parchment paper.

Step 2
Rinse scallops under cool water and blot dry with paper towel. Chop scallops into all pieces.

Step 3
Add scallops to a large mixing bowl with corn and green onions. In a separate medium bowl, stir together flour, cornmeal, smoked paprika, garlic powder, thyme, cayenne pepper, baking powder and salt.

Step 4
Make a well in flour mixture and add egg and milk. Stir well to create a batter. Stir batter into bowl with scallops and thoroughly mix.

Step 5
Add 1-2 inches of oil to a deep stainless-steel skillet and heat to 350F. Once oil is hot, use a spoon to scoop batter and a second spoon to gently push batter into oil working in batches of 4. Fry for 2-3 minutes on each side. Using a slotted spoon, transfer fritters to a paper towel lined plate to soak up oil.

Step 6
Once you have made 12 fritters, transfer to baking sheet and place in oven to keep warm. Continue with remaining batter, adding extra oil if needed. Serve hot with lemon wedges.
