Ingredients
Sea Scallops
Salt to taste
Black Pepper to taste
Oil (such as vegetable or canola oil)
2-3 Tablespoons of Butter
2 Garlic Cloves
2 Sprigs of Fresh Parsley
Fresh Herbs of your Choice

Step 1
Preheat a cast iron skillet over medium-high heat. While the skillet is heating up, pat the sea scallops dry with a paper towel to remove any excess moisture. Sprinkle one side of the sea scallops with salt and the other side with black pepper. Be sure to season both sides of the scallops evenly. Once the skillet is hot, add a small amount of oil to coat the bottom of the pan. Allow the oil to heat up for a moment.

Step 2
Carefully place the seasoned scallops into the skillet, salted side down. Make sure to space them out to prevent overcrowding, which can cause steaming instead of searing. Let the scallops cook without disturbing them for about 2 minutes. You'll know they're ready to flip when they easily release from the skillet and have a golden crust on the bottom. Once the scallops are ready to flip, turn them over using a spatula. Be gentle to avoid breaking them.

Step 3
Add butter to the skillet, along with the cloves of garlic (you can mince or thinly slice the garlic cloves) and freshly chopped parsley. Continue to cook the scallops for another minute or until they are cooked to your desired level of doneness and the butter is melted and fragrant. As the scallops finish cooking, you can baste them with the garlic-infused butter in the skillet to enhance their flavor and moisture.

Remove the skillet from the heat, and serve the scallops immediately, drizzling them with the flavorful garlic butter sauce from the pan and any fresh herbs you would like to add to your dish.
