Ingredients

2 shrimp packages, thawed

1 tbsp. coconut oil

2 cups butternut squash noodles

1 cup spinach

½ cup coconut milk

1 tbsp. almond butter

2 tsp. curry powder

Salt and pepper to taste

Directions

Step 1

Add oil to a skillet and bring to medium heat.

Step 2

In a small bowl, whisk together the curry powder, almond butter and coconut milk. Set aside.

Step 3

Add the butternut squash noodles and spinach to the skillet and toss with oil.

Step 4

To the skillet, add the curry powder mixture and toss the noodles to coat.

Step 5

Turn the heat to high to bring to a boil. Boil 3-4 minutes or until the liquid is reduced.

Step 6

Reduce the heat to medium-low and add the shrimp.

Step 7

Sprinkle with salt and pepper. Cook 3-4 minutes until shrimp is opaque.

Step 8

Serve immediately!
