Ingredients
3 portions Sizzlefish wild gulf shrimp, thawed
1 cup chopped celery
2 tbsp minced chives, divided
2 tbsp chopped dill pickles
1/3 cup mayonnaise
1 tbsp fresh lemon juice
1 tbsp hot sauce (optional)
1/4 tsp salt
1/8 tsp black pepper
1/8 tsp garlic powder
6 split top brioche hot dog buns
2 tbsp butter, divided
Directions
Step 1
Bring a medium pot of water to a boil and add shrimp. Boil for 3-4 minutes, until shrimp is pink.

Step 2
Strain and cool shrimp for 5 minutes at room temperature. Transfer shrimp to refrigerator until cold, about 30 minutes.

Step 3
To toast buns, slice off 1/4-inch from each side of buns. Heat 1 tablespoon of butter over medium heat in a large skillet. Once butter is bubbling, add sliced buns and toast in butter for 1 minute on each side. Add extra butter as needed. Set toasted buns aside.

Step 4
Combine chilled shrimp, celery, pickles, 1 tablespoon of chives, mayonnaise, lemon juice, hot sauce, salt, pepper, and garlic powder in a medium bowl.

Step 5
Spoon shrimp mixture into toasted buns and top with additional chives. Serve right away.
