Shrimp Scampi with Carrot Noodles

Ingredients

2 packages shrimp, thawed

1 tbsp. avocado olive oil

2 cups broccoli florets

2 large carrots, spiralized

1 tbsp. lemon juice

2 garlic cloves, minced

1/3 cup chicken bone broth

3 tbsp. ghee

½ tsp red pepper flakes

2 green onions, sliced

salt and pepper to taste

Directions

Step 1

In a large skillet, add the ghee and bring to medium heat to melt.

Add the garlic, broccoli and bone broth to the skillet. Simmer until the broth reduces in half about 3-4 minutes.

Step 3

Add the shrimp and sprinkle with salt and pepper and cook until opaque.

Step 4

Transfer the contents of the skillets to a bowl.

Add the avocado oil and carrot noodles. Toss to combine.

Step 6

Cook 5 minutes or until desired tenderness (al dente is what recommended).

Step 7

Transfer the carrot noodles to the bowl with the sliced green onions. Toss to combine and serve!
