Ingredients

4 portions Sizzlefish Red Snapper

3 tbsp olive oil

2 tbsp Cajun seasoning

1 tbsp butter

1 tsp minced garlic

1 cup low sodium chicken stock

1 (14 oz.) can diced tomatoes, drained

4 oz. cubed cream cheese

1 tsp Cajun seasoning

1 tbsp fresh chopped parsley

Directions

Heat olive oil over medium-high heat in a large skillet for 2 minutes.

In the meantime, blot moisture from snapper with paper towel. Season snapper liberally with Cajun seasoning on flesh and sides.

Add snapper to hot oil and sear for 2 minutes on all four sides. Set snapper on a plate. Discard oil and wipe skillet clean.

Add butter to skillet over medium-low heat. Once melted, add garlic and sauté for 1 minute. Add chicken stock, cream cheese and tomatoes to skillet. Bring to a simmer and cook until cream cheese is melted, and sauce is smooth, about 7 minutes.

Return snapper to skillet and heat for 2 minutes longer.
